As harvest season approaches, you'll find Israel, Penny, and Nelson in the vineyards, meticulously sampling for quality and ripeness. Once the perfect vineyard is discovered, Israel Montanez lends his expertise to guide the growers, ensuring that the grapes are harvested to precise specifications. Attention to detail is paramount, from monitoring brix to verifying the ripeness of seeds and grapes. Aging: 24 months in French oak barrels.
