About The Wine

Maxime Dubuet-Boillot is the grandson of Pierre Boillot, who founded the family estate in Volnay. Born in 1989, Maxime spent a decade as a mechanic for The 24 Hours of Le Mans before returning to the family vineyards, earning degrees in viticulture, oenology, and sales from the Lycee Viticole de Beaune. After working with some of Burgundy's top domaines, he brought a fresh, energetic approach to the family's holdings — organic viticulture, minimal intervention, and a deep respect for the terroir.

This Pommard comes from two distinct parcels within the appellation, blending the character of both sites into a single cuvee. Pommard sits at the heart of the Cote de Beaune, known for structured, age-worthy Pinot Noir with more muscle than neighboring Volnay but without sacrificing finesse. It's a village that rewards patience and rewards the drinker who wants substance.

Maxime's winemaking emphasizes precision and energy. His focus on Volnay's premier crus and select parcels from Beaune and Pommard results in wines with silky textures and expressive fruit — refinement over force, detail over volume.

The 2021 vintage in Burgundy delivered wines with purity and tension. This bottling shows exactly that: powerful and beautifully complex, with tannins that are present but already melted, and a savory backbone that keeps the fruit honest. Blood orange and darker red fruit, with the kind of balance that makes you pour a second glass before you've finished the first.

This is young Burgundy from a serious producer, priced where it should be. Pull the cork now with an hour in the decanter, or let it sit for three to five years and watch it open into something deeper.
