Myriad elements must align harmoniously to create the inimitable style of Nicolas Feuillatte. The process begins with delicately ripened grapes vinified separately by cru, plot, and varietal, which will comprise the cuvées within the range. Then, like an artist in front of a blank canvas, chief winemaker, Guillaume Roffiaen, must choose from a vast spectrum of textures and aromas to shape his desired expression of the beauty and wealth of the Champagne region. Quality production cannot be hurried, the amount of time each Nicolas Feuillatte Champagne quietly rests in the cellars before its release far exceeds the legal minimum: at least three years, and as many as ten years for the most prestigious cuvées such as Palmes d’Or.
