Full-bodied but balanced, this wine has a dark ruby color and an incredible nose that smells very much of the vineyard’s wild garrigue surroundings so typical in the South of France — lavender, rosemary, and thyme — as well as ripe red and blackberries. The noticeable acid makes the mouth water on the first sip, with great fruit flavor, with fennel, black cherry, and raspberry. This wine is ready to drink, but can age longer than most Syrah blends, and is perfect for meats, cheeses, sauces, and ripe fruit.
A blend of 60% Syrah, 30% Grenache, and 10% Mourvèdre, these grapes all come from old vines across 45 hectares of vineyards over limestone soil surrounded by both pine and oak trees in Pic Saint-Loup that have been in the same location, and family, for over 400 years. The climate here is rainier and cooler than most of the surrounding region, lending a very slow maturation process to these grapes, and more complexity to the wine. The grapes are grown biodynamically, farmed organically, and then hand-picked, with three weeks in vats before the wine spends 14 months aging in tanks before bottling. Although the wine was labeled NV, it is mostly 2015. Slightly chill this wine prior to service.
