The Côte Chalonnaise, a distinguished wine-producing region in Burgundy, France, is home to the Rully appellation, known for its Premier Cru vineyards. Defaix Frères, a family-run domaine established in 1955, is located in this esteemed region. Initially focusing on Chablis, the estate has since expanded to include key sites in Rully. Managed by Hélène Jaeger-Defaix and her husband Didier, the estate represents the fourth generation of the Defaix family in viticulture. Known for their commitment to organic and sustainable practices, Defaix Frères achieved full organic certification in 2019. The winemaking approach is characterized by minimal intervention, using natural yeasts and traditional methods to emphasize the authenticity of their wines.
