Camino de Cabras takes us on a journey through Galicia's vineyards, where the Atlantic influences the grapes from Rías Baixas, Valdeorras, Ribeira Sacra, and Ribeiro.
Crafting perfection isn't easy for Camino de Cabras. They take the daring step of risking the October rain for a late grape harvest, ensuring the grapes achieve the perfect balance of sweetness. Carefully handpicking the best grapes, they subject them to an exacting maceration process, which spans a full five hours.
Some of the vineyards are situated along one of the routes of the Camino de Santiago. In the town of O Barco, the Torrizola plots, with vines over 60 years old, and the No Serro plots, with vines over 150 years old, impart that pure and authentic Galician character.
Aging: 5 months in French oak barrels.
100% Mencia. This wine has a clear and bright ruby color, with aromas of red fruits like currants and blackberries. It offers a balanced taste with subtle notes of raisins and ripe fig jam. It pairs wonderfully with dishes like foie gras, steak tartare, red meats, and game.
