Illahe's winemaking philosophy is centered around minimal intervention and historical techniques. Grapes are harvested by hand and transported to the winery using traditional methods. Natural yeast fermentation, whole-cluster pressing, and hand-crafted processes ensure the utmost care is taken to create exceptional wines.

2021 is looking to be a great vintage for Willamette Valley. Wine Spectator was awarded this year with a 91-94 point review and said, "Pinots are perfumed, fresh, and vibrant."
Aging: in 25% French oak barrels.
Tasting Notes: 100% Pinot Noir. A delightful mix of scents, like cigar box, cedar, forest, fennel, earth, and rocky notes. Its taste is a medley of lingonberry, blueberry, violet, cranberry, and hints of raspberry seeds. This Pinot Noir has a nice structure with smooth tannins, and it finishes with a touch of clove, tobacco, and the freshness of fir. It can age beautifully for at least 10 more years.
