Les Hauts de Milly is produced by the outstanding and well-established artisanal Chablis producer Domaine Bernard Defaix. Bernard and Monique Defaix began with 2 hectares in 1959 and today with a lot of hard work the estate owns 27 hectares in Chablis and 6 hectares in Rully (Cote de Chalonnaise). Since the late 1990’s the Domaine has been managed by Bernard and Monique’s two sons Sylvain and Didier Defaix. Didier manages the vineyards while Sylvain is in charge of vinification and aging. Helene Jaeger-Defaix, the wife of Didier, is the owner of the Rully vineyards and manages the commercial aspects of the Domain.

The Domaine is located in the village of Milly, less than 1km NW of Chablis. The Domaine was certified organic in 2009 (Ecocert). They also use various preparations for a biodynamic approach. The wines here are impeccably made and showcase the deep limestone soils that have made Chablis world famous.

Originating in 1944, the Petit Chablis appellation encompasses a 2,938 acre expanse, offering a delightful gateway to the refreshing Chablis wine style.

In most cases, the vines are relatively young in this area. Unlike the AOP Chablis, Petit Chablis vines predominantly root themselves in youthful Portlandian limestone bedrock. This type of bedrock is commonly found higher up the slopes, where the sun's intensity is toned down, providing a unique touch.

Decanter says, “Petit Chablis retains the drive and purity of Chablis but in a more accessible way.” This means you can simply relish Petit Chablis by itself, making it your perfect choice for everyday sipping.

Though the renowned mineral character of Chablis is somewhat softer in Petit Chablis, remember that 'Petit' doesn't mean lesser. Some of these wines can easily rival many Chablis.

Aging: 100% Stainless Steel

100% Chardonnay. It boasts a distinctive and fun profile, with hints of zesty lemon, crisp green apple, and delicate white blossoms. An impeccabe balance that shines through with its refreshing, clean finish and lively, lingering acidity. This wine is the perfect pairing for seafood, cheese platters, summer & friends!
