About the Product

Domenica Fiore's journey started in the early 2000s when Cesare Bianchini managed olive trees in Orvieto. Instead of settling for average yields, he delved deep into olive varieties and studied the factors influencing the final product. 

During this time, his friend Galavan introduced him to Canadian entrepreneur Frank Giustra, who gifted Orvieto oils to his friends every Christmas. One day, Giustra organized a blind tasting for renowned Canadian chefs, and Bianchini's oil emerged as the top choice. This led to discussions about a partnership to maintain quality and expand production.

In 2010, Domenica Fiore officially began with five olive groves. Their philosophy was clear: produce the finest extra virgin olive oil. And it was accomplished when they won Best in Class with Olio Reserva at the 2013 NYIOOC.

Their journey continued with triumphs, including two Gold Awards and a Best in Class at the 2014 NYIOOC. Successes piled up in 2016 and culminated in four Gold Awards and another Best in Class at the 2017 NYIOOC. 

Their farm, a blend of olive groves, vineyards, and woodlands, offers an ideal microclimate thanks to Mediterranean trees and natural barriers. The unique soil, resembling beach sand with seashell fragments, revealed the origins of Domenica Fiore's olive trees – once a seabed.

Respecting the environment, they manage their olive groves organically, creatinga closed circle by reusing pruning and milling byproducts as fertilizer. They meticulously balance and blend various olive varieties to maintain sensory excellence in their extra virgin olive oils.

Tasting Notes: This unfiltered Novello oil is a brilliant green, offering a medley of flavors. It starts with fresh-cut grass and hints of chicory and tomato leaves, leading to a spicy, herbaceous finish akin to green apples. Perfect for vinaigrettes and bread dipping. Note: Although there is a "best by date of March 2023" on the bottle, we found this EVOO to be tasting great. Since it's bottled in stainless steel, there has been no light exposure and little, to no oxidation. Stainless steel tanks are the same that the olive oil producers use to store oil for years.
