Les Combes Cachées, a dream brought to life by three lifelong friends: Xavier Michelin, Michel Pousse, and François Aumonier. Nestled in the picturesque hidden valleys ("Les Combes Cachées") of La Livinière, just 18 miles from the medieval marvel of Carcassonne, this vineyard is the culmination of passion, friendship, and a relentless pursuit of excellence.
Xavier, Michel, and François hail from a quaint village near Toulouse, united by a shared love for wine and bicycling. After two years of searching, they found their perfect vineyard, set in the quality-driven terroir of La Livinière. Together with experienced winemaker Frederic Justeau, they transformed their dream into reality, producing their first vintage in 2015.
Les Combes Cachées thrives on teamwork and community. The vineyard's unique terroir, characterized by clay and limestone soils covered with gravel, imparts distinct personality to each plot, culminating in wines of remarkable quality and diversity.
Committed to environmental stewardship, Domaine Michelin has embraced organic practices from the outset. With an official organic label since 2018, the estate eschews chemical products, allowing the terroir to express its full potential naturally.
Les Trois Écus is the epitome of Domaine Michelin’s elegance and craftsmanship. This wine, aged for a minimum of 18 months (including 12 months in carefully selected French oak barrels), offers an exquisite balance of fruit and complexity. Ready to drink upon release, Les Trois Écus promises to evolve beautifully with further cellaring, rewarding the patient connoisseur with enhanced depth and character.

Carignan, Grenache, Syrah. The palate is silky and full-bodied, revealing layers of plum, blackberry, and a hint of vanilla, with well-integrated tannins providing a long, persistent finish. Perfectly paired with roasted meats, hearty stews, or a selection of fine cheeses, this wine offers an exquisite balance of fruit and complexity.
Notes of raspberry tart and cherry preserves are marked with licorice, floral and orange zest accents in this spicy, full-bodied red.
